Keto Recipe: Lemon Baked Salmon Parcels

Ingredients

  • 2 x salmon fillets

  • 2 teaspoons butter 

  • 2 teaspoons mixed dried herbs

  • 1 lemon, sliced

  • Tenderstem broccoli

  • ½ leek, sliced

  • Salt and pepper, to season

Directions

  1. Preheat the oven to 190C and prepare two large sheets of tin foil.

  2. Place a salmon fillet in the middle of each. Then add a teaspoon of butter on top, followed by herbs, seasoning and a couple of lemon slices.

  3. Arrange some tenderstem broccoli florets and slices of leek on the sides, then bring up the foil and fold over to create sealed parcels.

  4. Place on a baking tray and bake for 15 minutes until golden, soft and ready to dish out and serve.

This amazingly healthy dinner is perfect for the keto diet. It's fresh lemony touch makes us want to come back to making it again and again. Wrapping all of these delicious ingredients in foil before going in to the oven makes sure all the flavours and juices are locked in making the most of every bit!
