100g almond flour
50g coconut flour
2 x KetoKeto Lemon Poppyseed Bars
2 eggs
75g erythritol*
3 tablespoons melted butter or coconut oil
1 teaspoon vanilla extract
1 teaspoon baking powder
150g cream cheese
1 tablespoon coconut flour
1 tablespoon erythritol*
Place the flours and bars into a blender or food processor and pulse to break down well. Mix in the eggs, erythritol, melted oil or butter, baking powder and vanilla to form a batter.
Divide between a 6-hole muffin tin or muffin cases and bake at 180c for 20-25 minutes until risen and golden. Leave to cool.
Meanwhile mix together the cream cheese, flour and erythritol and leave in the fridge until needed.
When the muffins have cooled, remove from the tin and spoon some of the topping over each. Sprinkle over lemon zest then enjoy!
