This simple keto recipe makes a great lunch. It is filling and will help you last till your next meal - along with it's great taste and vibrant colours. We have included our favourite ingredients for this dish but you can add as many of your favourite keto friendly ingredients as you wish! You can add some mushrooms and even some chicken - the options are endless.
Ingredients:
- 3 peppers, halved and de-seeded
- 3 eggs
- 40ml milk
- 75g Cheddar cheese, grated
- 3 spring onions, chopped
- 2 tablespoons fresh parsley, chopped
- Black pepper and salt
- Pinch of chilli flakes
Make them!
- Place the peppers in an ovenproof dish, cut side up, so they are packed in quite tightly to keep them upright.
- Whisk together the eggs, milk, cheese, spring onions, parsley and seasoning, then pour into the peppers to fill to the top.
- Bake at 180C for 20-25 minutes until golden, the egg mixture has set and the peppers have softened. Leave to stand for 5 minutes, then enjoy!
