3 peppers, halved and de-seeded
3 eggs
40ml milk
75g Cheddar cheese, grated
3 spring onions, chopped
2 tablespoons fresh parsley, chopped
Black pepper and salt
Pinch of chilli flakes
Place the peppers in an ovenproof dish, cut side up, so they are packed in quite tightly to keep them upright.
Whisk together the eggs, milk, cheese, spring onions, parsley and seasoning, then pour into the peppers to fill to the top.
Bake at 180C for 20-25 minutes until golden, the egg mixture has set and the peppers have softened. Leave to stand for 5 minutes, then enjoy!
