Keto & Vegan Baked Ratatouille

Ingredients

  • 1 aubergine, thinly sliced

  • 1 large courgette, thinly sliced

  • 3 tomatoes, thinly sliced

  • 1 tablespoon oil

  • 1 tablespoon pesto

  • 1 teaspoon Italian herbs

  • Salt and black pepper

Directions

  1. Place the sliced vegetables in a bowl.

  2. Mix together the oil, pesto, herbs and seasoning then pour over the vegetables and mix up well to coat.

  3. Arrange the thinly sliced vegetables in an ovenproof dish, firmly packed in together and slightly layered up.

  4. Bake at 190C for 25-30 minutes until the vegetables are golden and softened. Sprinkle over Parmesan if you wish.
