Ingredients

  • 8 plums, stoned and slices

  • 150g frozen raspberries

  • 4 tablespoons sweetener (erythritol)

  • 1 tablespoon cornflour

  • 2 x Coconut & Cashew Keto Bars

  • 50g coconut chips

  • 2 tablespoons melted coconut oil

Directions

  1. First prepare the fruit: Place the fruit in a skillet or oven-proof pan with the sweetener and simmer for 5-10 minutes. Stir in the cornflour and mix well until the sauce thickens, Remove from the heat.

  2. Place the Keto bars, coconut chips and oil in a blender and pulse until broken down. Spread this over the top of the fruit to cover then bake in the oven at 170C for 10-15 minutes until golden and bubbling. Enjoy hot or cold with coconut cream/yogurt.

Most of us are use to our classic apple or rhubarb crumble, but there are such a range of fruits that pair amazingly with crumble. Plums and raspberries has to be our personal favourite. We have an amazing plum tree in our back garden so our plum and raspberry crumble feels all the more special. It is a victorian plumb tree so if you manage to find that variety I would definitely recommend them. They are known for their super sweetness and tenderness. The addition of the coconut flavour from our bars add another exciting taste in comparison to the traditional crumble. 

You can enjoy this dessert hot or cold with coconut cream or yogurt.
