Keto Cherry Cheescake Brownies

Ingredients

  • 3 x Keto Keto Cherry Bakewell Bars

  • 100g almond flour

  • 40g cocoa powder

  • 40g sweetener (erythritol)

  • 100g melted butter or coconut oil

  • 2 eggs, beaten

  • 1 teaspoon vanilla extract

  • 200g soft cheese

  • 2 tablespoons creme fraiche

  • 3 tablespoons sweetener (erythritol)

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 75g frozen cherries

Directions

  1. First make the brownie base: Place the Keto Keto bars into a blender or food processor and blitz until broken down. Add in the flour, cocoa powder, sweetener, melted butter or oil, eggs and vanilla and blend again.

  2. Spread this mixture out into a 9x9in greased and lined baking tin then set aside.

  3. Blend the soft cheese, creme fraiche, sweetener, eggs and vanilla then pour over the base to cover. Scatter over the cherries and flaked almonds then bake for 25-30 minutes until firm and golden.

  4. Leave to cool then chill in the fridge for 1 hour. Cut into 9 bars then enjoy!
