3 egg yolks
A pinch of salt
3 ounces of cream cheese
Egg whites left over from the egg yolks
A pinch of cream of tartar
Preheat your oven: Start by preheating your oven to 150°c (300°f). Line a baking sheet with parchment paper to prevent sticking.
Prepare the egg yolks mixture: In a medium-sized bowl, combine the egg yolks, salt and softened cream cheese until smooth. Ensure there are no lumps for a uniform texture
Whip the egg whites: In a separate, clean bowl , add the egg whites and pinch of cream of tartar. Using an electric mixer, beat the egg white on high speed until stiff peaks form. This usually takes about 3-5 minutes. The cream of tartar helps stabilise the egg whites, giving the bread it's fluffy texture.
Fold the mixture together: Gently fold the egg yolk mixture into the whipped egg whites. Be careful not to deflate the egg whites. Use a spatula to combine the mixtures with gentles, sweeping motions until just mixed.
Shape the cloud bread: Spoon the mixture onto the prepared baking sheet, creating 6-8 mounds. Flatten each mound slightly with the back of the spoon to firm rounds, resembling small bread rolls or burger buns.
Bake: Place the baking tray into the oven and bake the cloud breads for 20-30 mins or until the cloud breads are golden brown and set. Keep an eye on them to prevent over-browning.
Cool: Once baked, remove the cloud bread from the oven and allow them to cool on the baking sheet for a few minutes. Then transfer them to a wire rack to cool completely. This helps maintain their structure and prevents sogginess.
