4 large egg yolks
1/3 cup keto-friendly sweetener (e.g., erythritol or monk fruit)
2 cups unsweetened almond milk
1 cup heavy cream
1 tsp vanilla extract
1/2 tsp ground nutmeg (plus extra for garnish)
Optional: 1/4 tsp ground cinnamon
Optional: 1/4 cup rum, bourbon, or brandy (for an adult version)
Whisk the Egg Yolks and Sweetener:
In a medium bowl, whisk the egg yolks and keto sweetener until the mixture is pale yellow and slightly thickened. This step ensures your eggnog will have a creamy consistency.
Heat the Milk Mixture:
In a saucepan, combine the almond milk, heavy cream, and nutmeg over medium heat. Stir occasionally and heat until it just begins to simmer. Avoid boiling, as this could cause the mixture to curdle.
Temper the Eggs:
Slowly pour a small amount (about 1/4 cup) of the hot milk mixture into the egg yolks while whisking constantly. This process, called tempering, prevents the eggs from scrambling.
Cook the Eggnog:
Continue to heat the mixture over medium-low heat, stirring constantly, until it thickens slightly and coats the back of a spoon. This should take 3–5 minutes. Be careful not to overheat.
Add Flavorings:
Remove the saucepan from the heat and stir in the vanilla extract. If you’re making an adult version, add your choice of rum, bourbon, or brandy at this stage.
6.Chill and Serve:
Pour the eggnog into a jug or pitcher and refrigerate for at least 2 hours to let the flavours meld.
Serve cold, garnished with a sprinkle of nutmeg. For extra indulgence, top with sugar-free whipped cream.
